What to Avoid - Part I
Dough Bleaching Agents
Potassium Bromate: Used to help dough rise, it's classified as a possible human carcinogen and is banned in many countries, though not in the United States. May be listed as “Bromated Flour.”
Bleached Flour: Flour that has been treated with chemical agents like chlorine dioxide or benzoyl peroxide to whiten and speed up aging. This process strips away nutrients.
Azodicarbonamide (ADA): Used as a dough conditioner and bleaching agent. It's banned in the European Union and other countries.

Preservatives
Calcium Propionate: Used to inhibit mold growth, it has been linked to migraines and behavioral changes in children.
Potassium Sorbate: Artificial; can cause allergic reactions or gastrointestinal issues.
